Don’t be intimidated, this is easy and you can do this! My family LOVED the flavors of a bacon cheeseburger in a calzone hot pocket and they turned out so pretty and so deelish.

Mini Bacon Cheeseburger Calzone Hot Pocket Recipe

Homemade Bread Dough for Cheeseburger Calzone Hot Pockets
Directions for Homemade Bread Dough (skip past all of this part if you are buying your dough) but it’s so easy and so cheap… so I hope you don’t skip this! Making homemade bread dough is a valuable homemaking tool that will save you TONS of money! Ok Start your dough before you cook the meat.
Ingredients:
- 2 1/2 Cups Flour
- 1 Cup Warm Water (a little warmer than warm but not hot)
- 1 Tbsp. Yeast
- 1 Tbsp. Brown Sugar
- 1 Tbsp. Olive Oil
- 1/2 tsp. Salt
Directions:
Put water into a large bowl, Warm Water (a little warmer than warm but not hot) then add sugar and yeast.
Stir up just a little to mix. Don’t over stir, just enough to mix your starter.
Then let sit for about 5-10 min. It will get foamy on top, this is is how you will know it’s ready to add the other ingredients.
Add your Olive oil, Salt and Flour and stir. Your mixture will be a little clumpy. That’s ok! You are going to knead your dough so that it will become smooth.
Sprinkle a little flour on the surface of your counter and begin to knead. kneading is really just mixing the yeast up more to make sure it mixes throughout your bread dough. Dump your dough into a pile. Scrunch it together and start by folding the dough toward you.
Then push away with palm of your hand. Turn about 1/3 of the way and do it again.. continue for about 5 minutes. You don’t have to do this perfectly!
The dough will become less and less sticky and more smooth. You can then shape it into a nice little ball to let rise. Set it back into a bowl and cover to let rise for about 45 min. to an hour. You’ll know it’s ready when its doubled in size.
Filling for Cheeseburger Calzone Hot Pocket
While your dough is rising…make the “insides” of your Mini Bacon Cheeseburger Calzones... You’ll have plenty of time to make the insides, so no worries!
Quick Tips
- Make your filling the way you like them. This is a very versatile recipe. If you don’t like bacon flavored filling, you can leave the 3 slices bacon out!
- Feel free to use ground turkey or ground chicken for your filling!
- Make a double batch and freeze for later! You’ll be so glad you did!
- Switch up the filling with Taco Meat and add this to your collection of Mexican Recipes!
- Add dipping sauces to jazz these up even more! Like a cup of Ranch Dressing or these yummy dipping sauces!
Ingredients:
1/2 Ground Beef –Cooked and Crumble
- 3 slices of Bacon, cooked and Crumbled
1/2 Cup Catsup
1 1/2 tsp. Yellow Mustard
1/2 Cup Cheddar Cheese
1/2 Cup Shake and Bake
- 1/3 Cup Shredded Parmesan
- Optional Panko Bread Crumbs for more crunch on the outside.
- Optional ingredients: Finely chopped onion or onion powder, hamburger relish, pickles, tomatoes (all finely chopped), Worcestershire sauce, Steak Sauce, Because these are “mini” calzones.
Directions:
In a large skillet cook your Hamburger meat over medium high heat and cook Bacon slices over medium heat…so it won’t splatter as much. if you have not already done this. You can also use store-bought bacon bits.
Put your cooked hamburger, bacon and all the rest of the ingredients into a bowl, and stir. Set aside until dough is ready.
Heat oven to 350 degrees.
Roll out your dough to about 1/8 of an inch thick and cut small circles with a cookie cutter or anything round you have…you can even use a glass! Then put about 1 Tbsp. of your Cheeseburger meat mixture in the middle...
Then add a little Cheddar Cheese on top if you would like it more cheesy.
Fold dough over and Crimp edges together with a fork or with a Sandwich Sealer thing…so that everything stays inside while baking…I have a pasta thingy that crimps the edges together ..that’s why my edges are different…A fork works just as well for sure!
Put your Shake and Bake, Shredded Parmesan, Panko and the other half of your cheddar cheese into a shallow bowl. This is for the outer crunchy layer.
After you have made several Cheeseburger Calzones…Dip them or Brush them with an Egg Wash…(that is just an egg with about a Tbsp. of water mixed together well) This will help the Shake and Bake mix to stick to it.
Then dip your cheeseburger calzones into your crunchy crispy mixture…very gently, so they don’t fall apart. They are a little delicate at this stage, until cooked.
After coating, put your mini cheeseburger hot pocket onto an ungreased cookie sheet. After doing this will all of your Calzones, put them into a preheated oven at 350 for 10-15 min. Cook them until they are golden brown.
When done cooking, remove them off the baking sheet and let cool on a cooling rack.
That’s it! My family REALLY enjoys these and I make them all the time. If you love Bacon Cheeseburgers, I know that you will too!
If you have leftovers or you make a double batch, Put them into a plastic freezer bag and freeze! Wait until they are completely cooled before freezing.
Although this seems a little complicated, it really is not. Especially if you buy your Bread Dough..but I know many of my readers like to do things from scratch so there you go

- 1/3 Cup Fresh Shredded Parmesan Romano Cheese
- 1/3 Cup Panko Bread Crumbs This is optional
- 1 Egg for egg wash
Instructions
Make your dough if making from scratch. Otherwise skip this step
Cook your Bacon and Ground Beef.
Set this aside in a bowl, with the rest of the ingredients and stir. Set aside until dough is ready.
Roll out your dough to about 1/8 of an inch thick and cut small circles
Put about 1/2 Tbsp. meat mixture in the middle..
Then add a little Cheddar Cheese on top if you would like it more cheesy.
Fold over and Crimp edges together with a fork so that everything stays inside or you can use a Cut and Seal
Dip or Brush with an Egg Wash…(that is just an egg with about a Tbsp. of water mixed together well) This will help the Shake and Bake and Shredded Parmesan to stick to it.
Dip the Calzones into your crispy crunchy mixture of shake and bake, parmesan, cheddar cheese.
After coating, put onto a cookie sheet and put into a preheated oven at 350 for 10-15 min
After baking, remove from baking sheet. Let cool on a cooling rack…
Freeze leftovers.
